Fermented Rainbow Carrots

These fermented carrots are very versatile. You can eat them as a snack, add them to a salad or in a soup. Simple goodness!


  • 1 pound rainbow carrots
  • 1 tablespoon salt
  • water 

*Must use a non-iodized salt for fermentation to work.


1 Quart Jar


  1. Rinse and peel carrots. Cut carrots to fit under the shoulder of the jar.
  2. Fill the jar with water
  3. Add 1 Tablespoon of salt ( Important: all the carrots must stay submerged in the salt brine )
  4. Ferment at room temperature for 5 days. Then keep refrigerated as you enjoy.
